World Teatime #5: The Tea Ceremony
The tea ceremony, where water is boiled, tea is prepared, and the host serves it to guests, was established in its current form around the 15th century by Sen no Rikyu. The tea room, tea utensils, sweets, and tea itself embody Japan's deep spirituality and aesthetic sense, and can be considered a traditional, comprehensive art form that engages all five senses.

Nerikiri is made by adding gyuhi (a type of mochi) to white bean paste and heating and kneading it. In the tea ceremony, sweets that complement the tea are considered appropriate, and are chosen according to the season, purpose, and theme of the tea gathering. Nerikiri falls under the category of high-grade Japanese sweets and is considered best served as the main sweet (omogashi) paired with thick tea.
